Grain-powered lunch ideas for busy weekdays

Packing nutritious and appealing lunches can be a daily challenge. Incorporating Ontario-grown whole grains like barley, corn, oats and wheat can make lunches both wholesome and satisfying. Here are some grain-based lunch ideas for you to try this week!

1. Whole grain wraps and sandwiches

  • Turkey and spinach wrap: Use a whole grain tortilla filled with sliced turkey, fresh spinach, and a light spread of hummus. Pair with apple slices and a homemade whole grain banana muffin.
  • Egg salad sandwich: Prepare egg salad using Greek yogurt instead of mayonnaise for added protein. Serve on whole grain bread with a side of carrot sticks and a piece of fruit.

2. Grain bowls

  • Barley and vegetable medley: Combine cooked barley with roasted vegetables and a protein source like grilled chicken or tofu. Drizzle with a light vinaigrette.
  • Wheat berry and lentil salad: Mix cooked wheat berries with cooked lentils, diced cucumbers, grape tomatoes, and feta cheese. Add a lemon-olive oil dressing for flavor or create your own Greek flavoured inspired dressing!

3. Bento box combinations

  • DIY lunchables: Assemble whole grain crackers, thinly sliced grilled chicken, cheese cubes, sliced grapes, and snap peas. Include a small treat like a homemade oatmeal cookie.
  • Mini pancake stacks: Pack whole grain mini pancakes with a side of yogurt for dipping, along with sliced strawberries and cucumber sticks.

4. Snackable sides

  • Homemade granola bars: Create bars using oats, soy butter, and dried fruits. These are great for a midday energy boost.
  • Power balls: Combine oats, honey, and soy butter to form bite-sized snacks. Add-ins like chia seeds or mini chocolate chips can enhance flavor and nutrition.
