5 tips for fall grain-based baking

There’s something special about fall—the crisp air, cozy sweaters, harvest season and of course, the comforting flavours of baked goods. As the seasons shift, so do our cravings, and fall is the perfect time to turn on the oven and bake something hearty, wholesome, and grain-based.

 Whether you’re a seasoned baker or just getting started, here are some easy fall-inspired baking ideas and tips to make the most of the season.

Simple tips for baking with grains

Not all grains behave the same in the kitchen—here are some quick tips to help you get the best results:

1. Start with fresh flour
Whole‑grain flours (like whole wheat and oat) contain the germ and bran, which include natural oils prone to oxidation and rancidity. For optimal flavour and freshness, store them in airtight containers in a cool, dark place, or freeze them—ideally letting them return to room temperature before use.

2. Don’t overmix whole grain batters
Whole grain flours are more dense and absorb more moisture. Overmixing can lead to tougher textures. Stir until just combined for light and fluffy results.

3. Let batters rest
Giving your batter or dough 10–15 minutes to rest before baking allows the grain to fully absorb liquid. This often leads to better texture and more even baking.

4. Mix your grains
Try blending all-purpose flour with whole wheat or adding oats to muffins and breads. This creates a balance of nutrition, texture, and flavour.

5. Add moisture
Whole grains absorb more liquid than refined flour, so when baking with whole‑grain flours—especially if you’re using 100% whole wheat—it’s important to increase the liquid. The Whole Grains Council recommends adding approximately two teaspoons of extra liquid per cup of whole‑wheat flour to help maintain moistness and tenderness in your baked goods.
