Budget friendly grain recipes: Tofu stir fry with udon noodles

Ingredients:
- 2 cups of extra-firm tofu
- ½ cup of chopped green onions
- 1 cup of shredded carrot
- ½ cup of sliced mushrooms
- ½ yellow bell pepper, cut into slices
- ½ red bell pepper, cut into slices
- 2 tbsp of soybean oil
- 3 cloves of minced garlic
- 1 ½ tbsp of grated ginger
- 2 tbsp of soy sauce
- One cup of cooked udon noodles (We served our stir fry on this, but you can eat the stir fry on its own or use another grain choice like cooked barley).
Substitute any of the vegetables above for ones you already have on hand or what is in season this month! The good thing about this recipe is that it is versatile, budget-aware, and flexible for your family’s kitchens.
Instructions:
- Drain and remove the tofu from the package, and let it dry for about 10 minutes.
- Once dry, chop the tofu into ½-inch sized cubes.
- In a large non-stick pan or skillet heated at medium-high, add 1 tablespoon of oil.
- Place the tofu cubes on the pan and grill on each side for 2-3 minutes until crispy.
- Remove the tofu from the pan and set aside.
- Lower the heat of the pan to medium.
- Add the remaining tablespoon of oil to the pan.
- Add green onions, carrots, peppers, and mushrooms to the oiled skillet.
- Cook the vegetables until they are soft.
- Add in the garlic and continue to cook for 45-60 seconds.
- Add the tofu and soy sauce into the pan and cook for 2-3 minutes, until the tofu is heated through again.
- Remove the pan from heat, serve on a bowl of cooked udon noodles, and enjoy!
