Cinnamon apple streusel muffins
These muffins are perfect for a cozy breakfast or snack. The whole wheat flour adds a hearty texture, while the streusel topping gives a sweet, cinnamon crunch!

Ingredients:
Muffins:
- 1 ½ cups whole wheat flour
- ½ cup all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg (optional)
- 1 large egg
- ½ cup brown sugar (packed)
- ¼ cup granulated sugar
- ½ cup unsweetened applesauce
- ¼ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- ½ cup milk (or soy beverage)
- 1 ½ cups peeled, diced apples (about 1-2 medium apples)
Streusel Topping:
- ¼ cup whole wheat flour
- ¼ cup brown sugar (packed)
- 1 tsp cinnamon
- 2 tbsp cold butter (cut into small cubes)
Directions:
Prepare the Streusel Topping:
- In a small bowl, combine the whole wheat flour, brown sugar, and cinnamon.
- Cut in the cold butter with a fork or pastry cutter until the mixture forms a crumbly texture. Set aside.
2. Prepare the Muffin Batter:
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the muffin cups.
- In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate medium bowl, whisk together the egg, brown sugar, granulated sugar, applesauce, vegetable oil, vanilla extract, and milk until well combined.
- Pour the wet ingredients into the dry ingredients and stir just until combined (don’t overmix). Gently fold in the diced apples.
3. Assemble the Muffins:
- Divide the muffin batter evenly among the prepared muffin cups.
- Sprinkle the streusel topping generously over each muffin.
4. Bake:
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
