Cinnamon apple streusel muffins

These muffins are perfect for a cozy breakfast or snack. The whole wheat flour adds a hearty texture, while the streusel topping gives a sweet, cinnamon crunch!

Ingredients:

Muffins:

  • 1 ½ cups whole wheat flour
  • ½ cup all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg (optional)
  • 1 large egg
  • ½ cup brown sugar (packed)
  • ¼ cup granulated sugar
  • ½ cup unsweetened applesauce
  • ¼ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • ½ cup milk (or soy beverage)
  • 1 ½ cups peeled, diced apples (about 1-2 medium apples)

Streusel Topping:

  • ¼ cup whole wheat flour
  • ¼ cup brown sugar (packed)
  • 1 tsp cinnamon
  • 2 tbsp cold butter (cut into small cubes)

Directions:

Prepare the Streusel Topping:

  • In a small bowl, combine the whole wheat flour, brown sugar, and cinnamon.
  • Cut in the cold butter with a fork or pastry cutter until the mixture forms a crumbly texture. Set aside.

2. Prepare the Muffin Batter:

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the muffin cups.
  • In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate medium bowl, whisk together the egg, brown sugar, granulated sugar, applesauce, vegetable oil, vanilla extract, and milk until well combined.
  • Pour the wet ingredients into the dry ingredients and stir just until combined (don’t overmix). Gently fold in the diced apples.

3. Assemble the Muffins:

  • Divide the muffin batter evenly among the prepared muffin cups.
  • Sprinkle the streusel topping generously over each muffin.

4. Bake:

  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
