Mango Coconut Overnight Oats

March is Nutrition Month and we’re putting a spotlight on oats, with the help of nutrition-based Chef Jill Hillier. Check out this easy to make, nutritious recipe made with the delicious, tropical flavours of mango and coconut!

Yield: 1 serving

Prep time: 5 minutes

Ingredients:

  • ½ cup rolled oats
  • 1 tsp chia seeds
  • 1 tsp ground flaxseed
  • 1 tbsp toasted coconut + more for garnish
  • Pinch of salt
  • ½ cup milk of choice
  • ½ cup plain Greek yogurt
  • 1 tbsp maple syrup, or to taste
  • ½ cup diced or pureed mango, fresh or frozen (see note)

Directions:

  1. Add dry ingredients to a 500 ml jar or container, followed by milk, yogurt, and maple syrup, and mix well to combine.
  2. Seal with a lid and place in the fridge overnight.
  3. Top with diced or pureed mango and toasted coconut.
  4. Enjoy!

Note: Can use fresh or frozen mango that’s been defrosted. To puree, add the fresh or defrosted mango to a small blender or use an immersion blender to blend until smooth.
