Cornflakes marshmallow treats
Give your little learner a fun homemade lunchbox snack: Cornflakes marshmallow treats! Similar to a Rice Krispie treat, this simple recipe needs only 5 simple ingredients that are easy to find. The main ingredient, cornflakes, is made from local grain corn. Prepare them with your children on the weekend to enjoy it in their lunchbox throughout the school week. Top with rainbow sprinkles before refrigerating the squares to make it an extra fun treat.

Equipment:

- A large pot
- Rubber spatula
- Measuring cups
- Small cookie sheet or a 9 x 13 inch baking pan
- Parchment paper (optional)
Ingredients:
- 4 tbsp (56 g) unsalted butter
- 1 tsp (5 mL) pure vanilla extract
- ⅛ tsp (0.6 g) salt
- 1 bag (250 g / 8 oz) marshmallows
- 5 cups (200 g) corn flakes
- Rainbow sprinkles (optional)
Directions:
- Grease the cookie sheet or 9 x 13 inch baking pan, or cover with parchment paper. Set aside.
- In a large pot, turn the heat to low. Melt butter. Add vanilla extract and salt and stir until dissolved.
- Add the marshmallows and stir until melted. Remove from heat.
- Add the corn flakes cereal to the marshmallow mixture. Mix together to coat corn flakes.
- Pour the cornflakes marshmallow treats into the prepared pan. Tip: Cover a spatula with oil so it doesn’t stick to it, and spread to the edges of the pan and press down. Optional: Top with rainbow sprinkles
- Set in the refrigerator for 15-20 minutes and enjoy!
