Across the world, grains provide food to billions. On March 20, we recognize the importance of these universal food staples during World Flour Day. This year’s motto, “Flour is Life,” reflects the vital role flour plays in the lives of people across the globe. But what makes flour so special, and just how important is it?
Flour is made from grinding up grains to make a fine powder. Nearly any grain can be used, resulting in an incredible variety of flours worldwide. From the many types of wheat flour used for bread and cakes to corn flour such as masa harina in Mexico, flour takes countless forms in many cultural cuisines.

Even 14,500 years ago, before agriculture became widespread people were already baking and eating bread. It also varies in composition: for example, flour used to make pasta contains significantly more gluten (protein) than flour used for pastries.
Flour represents nutrition, and economic stability for millions across the globe. The grains found in flour offer many health benefits. For example, in Canada, wheat flour is fortified with folic acid, a policy that has helped reduce certain birth defects and improve public health. Grain farmers also play a crucial role in supporting their communities, helping ensure that families have access to safe, nutritious food.
