Grains for the holidays: spoonbread
Did you know you can make bread with a variety of Ontario grains? Cornmeal and corn flour are two products made from Ontario corn and can be featured in bread recipes. Spoonbread is a classic southern-style dish that goes perfectly as a side on any holiday table!
Yield: 8 servings
Prep time: 25 minutes
Cook time: 35-40 minutes
Ingredients:
- 1 cup milk
- 1 cup boiling water
- 2 large eggs
- 2 tbsp melted butter
- ½ cup cornmeal
- ½ cup corn flour
- 1 ½ tsp baking powder
- 1 tsp salt
Directions:
- Preheat oven to 375℉.
- Grease an 8” cast iron skillet or 8” rectangular baking dish.
- In a medium bowl, combine salt and cornmeal.
- Slowly mix in the boiling water.
- Add in the melted butter, mix until smooth, and let cool.
- Once cool, add in the corn flour and milk and stir until well combined.
- In a small bowl, beat both eggs together completely.
- Add eggs and baking powder to the flour mixture and mix with an electric mixer or whisk until combined.
- Pour batter into pan or skillet, and place in oven.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Serve, and enjoy!
