Savoury oatmeal bowl with veggies and eggs
This savory oatmeal bowl is an affordable, satisfying lunch that uses pantry staples like oats while also allowing for creativity with your toppings! Our recipe calls for use avocado, lettuce, red pepper and microgreens, but you can use whatever vegetables you have on hand, making it a flexible and cost-effective meal. Don’t forget to your protein like a hard-boiled egg, or tofu for a hearty and simple meal.

Ingredients:
- ½ cup rolled oats
- 1 cup vegetable broth or water
- ½ red pepper, sliced
- ½ avocado, sliced
- ½ cup microgreens
- ½ cup lettuce
- 1 hard-boiled egg
- Salt and pepper, to taste
- ½ tsp garlic powder or 1 clove garlic, minced
- ¼ tsp sesame seeds (option for topping)
- Grated cheese (optional, for topping)
- Hot sauce or soy sauce (optional for extra flavor)
Directions:
- In a small pot, bring the vegetable broth (or water) to a boil. Add the rolled oats and reduce heat to low. Simmer, stirring occasionally, for about 5-7 minutes or until the oats are tender and the liquid is absorbed. Stir in the garlic powder, and a pinch of salt and pepper as the oats cook. Set aside.
- In a second small pot add your egg and cover with cold water. Place over medium-high heat and bring pot to a rapid boil. Remove from heat and cover pot with lid. Let eggs sit in hot water for 9-12 minutes.
- Carefully drain the water, and transfer egg to bowl of ice water, or under running cold water for a few minutes. Once cooled, peel eggshell.
- Place oatmeal, egg, red pepper, avocado, microgreens and lettuce into a bowl. Top with any optional toppings like cheese, hot sauce, or soy sauce for extra flavor.
