Mango Coconut Overnight Oats
March is Nutrition Month and we’re putting a spotlight on oats, with the help of nutrition-based Chef Jill Hillier. Check out this easy to make, nutritious recipe made with the delicious, tropical flavours of mango and coconut!
Yield: 1 serving
Prep time: 5 minutes
Ingredients:
- ½ cup rolled oats
- 1 tsp chia seeds
- 1 tsp ground flaxseed
- 1 tbsp toasted coconut + more for garnish
- Pinch of salt
- ½ cup milk of choice
- ½ cup plain Greek yogurt
- 1 tbsp maple syrup, or to taste
- ½ cup diced or pureed mango, fresh or frozen (see note)
Directions:
- Add dry ingredients to a 500 ml jar or container, followed by milk, yogurt, and maple syrup, and mix well to combine.
- Seal with a lid and place in the fridge overnight.
- Top with diced or pureed mango and toasted coconut.
- Enjoy!
Note: Can use fresh or frozen mango that’s been defrosted. To puree, add the fresh or defrosted mango to a small blender or use an immersion blender to blend until smooth.
