Dark Chocolate Cherry Granola with Cinnamon Soy Butter

3 cups rolled oats
⅓ cups unsweetened shredded coconut 
1/3 cup soy butter (such as WowButter)
1/4 cup liquid honey
3 tbsp canola oil 
1 tsp vanilla
1/2 tsp salt
1/4 tsp cinnamon 
1/2 cup dried cherries
1/2 cup dark chocolate, chopped

Preheat oven to 225F
Combine oats and coconut in a large bowl
In a pan or microwave safe dish combine soy butter, honey, canola, vanilla, salt and cinnamon – heat and stir until smooth.
Pour over oats and stir until evenly coated.
Transfer oat mixture to parchment lined baking sheet
Bake for 1 hour, stirring every 15-20 minutes.
Cool to room temperature.
Add cherries and chocolate.
