3/4 cup (185 mL) wheat berries
2 ¼ cups (562 mL) water
1 cup (250 mL) diced orange pepper
1 cup (250 mL) diced zucchini
2 Tbsp (30 mL) minced chives
1 Tbsp (15 mL) oil
1 Tbsp (15 mL) white balsamic vinegar
Cook the wheat berries: put the water and wheat berries in a saucepan, cover and bring to a boil. Reduce heat to medium low and simmer approximately 45 to 60 minutes. Remove from heat, drain and cool;
In a large bowl, combine the cooked wheat berries, orange pepper, zucchini and chives;
Make the dressing: in a small bowl whisk together the oil and balsamic vinegar;
Pour the dressing over the wheat berry mixture and stir well. Serve.
Makes 4 cups (1.0 L).
One serving = ¾ cup (187 ml)
